Post-Workout Power Breakfast: Scrambled Eggs with Mushrooms, Bacon & Onions

Scrambled Eggs with Sautéed Mushrooms, Bacon & Onions — The Ultimate Morning Boost

After a tough strength session, your body deserves real fuel — not just calories, but nutrients that help muscles recover and energy levels rise again.
This quick and flavorful dish gives you high-quality protein, healthy fats, and a solid dose of vitamins and minerals to start your morning strong.

Ingredients (Serves 1)

  • 3 large brown mushrooms (or 5 small ones)
  • ½ medium white or red onion
  • 2 tablespoons bacon, cut into small cubes
  • 2 large eggs
  • 2 teaspoons olive oil (divided)
  • Salt & pepper to taste

Instructions

1. Sauté the flavor base
Warm a pan over low–medium heat and add 1 teaspoon of olive oil.
Add the chopped onion, bacon cubes, and sliced mushrooms. Stir gently.

2. Season and cook
After about 3 minutes, add salt and pepper to taste and mix again.
Continue cooking until the mushrooms shrink to about half their size and the bacon turns lightly golden. Remove from heat and set aside.

3. Scramble the eggs
In a second pan, heat 1 teaspoon of olive oil. Beat the 2 eggs in a bowl, season lightly, and pour them into the warm pan.

Let them cook halfway (about 1–2 minutes), then gently mix with a spatula to form soft, fluffy curds.

4. Serve & enjoy
Plate the eggs, top with your warm mushroom–bacon–onion mix, and enjoy your power-packed breakfast!
